It’s no exaggeration to say that the Silvia home espresso machine, released back in the '90s, was an icon of the then-budding third wave of coffee. However, Rancilio actually began its illustrious run in the commercial space, where it continues to innovate and reaffirm the good faith that it has garnered from café owners and workers alike over the years. About the Rancilio Kryo 65 Elite Commercial Espresso Grinder

The Kryo Elite is, even compared to the other members of the Kryo line, an absolute powerhouse. With a flat, 64mm set of stainless steel burrs, it can pump out an average of 4.5 grams of coffee per second, or approximately 16 kilograms in an hour, making it capable of cruising through a mid-morning rush. Additionally, thanks to ThermoSteel treatment applied to the burrs and the Kryo’s iconic “fins” (which dissipate heat generated by the motor and burrs), the burrs remain at a low temperature, preventing slight warping due to heat and ensuring better grind consistency.

Other premium features include anti-static and anti-retention technology in the grind chute. This prevents clumping and mess (static-charged grinds can annoyingly cling to the grinder and counter), ensuring that the grinds in your portafilter are consistent in mass, always fresh, and primed for perfect puck preparation every time. The grind chute also features a handy light that shines into the portafilter, allowing baristas to work even on dark winter mornings or late shifts.

The Kryo Elite offers a continuous dosing mode and three time-based auto-dose profiles (single, double, and a custom option). These are selected and activated using tactile buttons, one of which also starts the grinder. Parameters are easily read from the minimalist digital display, which also indicates when the Elite requires calibration or servicing and when the hopper needs to be refilled. The grinder can also be started with a convenient portafilter button. Along with the adjustable no-slip, hands-free portafilter holder, this design allows baristas to simply slide their portafilter in and watch the grinder run, streamlining workflow. Cleaning and replacing the Kryo Elite’s burrs is also a cinch. Simply rotate the disk-shaped interface and remove it for easy access to the grinding chamber.

Grind adjustment on the Kryo Elite is super precise and controlled by a dial on the right-hand side of its body, which can be locked to prevent accidental or unauthorised adjustments. If you do change your grind, the digital display recalls and shows the direction of the last adjustment (coarser or finer), making it easier to find your way back or remember your previous settings during dial-in sessions. Finally, once calibrated, the Kryo Elite features a Smart Adjustment System (SAS) that automatically adjusts your time-based auto-dose profiles when you change the grind setting, so your dose remains consistent.
