When it comes to brewing coffee, one of the most important extraction variables is the temperature of your brewing water. Broadly speaking, hotter water increases extraction and colder water does the opposite. Depending on the particular coffee you’re brewing with, its roast level, processing and unique flavour profile, you may want to brew with hotter or colder water. It may sound pedantic to the uninitiated, but the difference a few degrees can make to your brew can be striking. 

If you’re not interested in the DIY thermometer-in-your-normal-kettle method, then a variable temperature kettle is what you’ll likely be after, and this one made by German manufacturer Severin is a great option. It has a 1.7 litre capacity, an ergonomic handle, and easily attaches to a circular base. Using the button interface on the handle, you can set your desired temperature in 5°C increments, and there’s a “keep-warm” function that will maintain your temperature for up to 30 minutes, so you can brew multiple cups over an extended period of time. 

It’s worth noting that unlike coffee-centric variable temperature kettles like the Timemore Fish or Felicita Square, the Severin kettle does not feature a gooseneck spout for precise pouring. For certain brewing methods like an AeroPress, French press, Clever Dripper or even Simplify Brewer, this may not be an issue for you, but for something like a V60 which requires a little more precision for consistent results, you may benefit from the addition of something like Hario’s Air Kettle.
